In Cook Once, Eat Twice Recipes, Dairy-Free, Fall, Poultry, Recipes, Spring, Winter On April 15, 2013 1 Comment

Inspired by the upcoming National Garlic Day (April 19th), we decided that this French classic was in order. Do not be afraid of the amount of garlic in this recipe, when garlic slow cooks it loses its bite and becomes the aromatic, flavorful star of the show.

In Fall, Poultry, Recipes, Soups, Stews, and Chili, Spring, Winter On January 27, 2013 0 Comments

This is such a pretty (and healthy) stew. Cut the potatoes, carrots, zucchini and sausage roughly the same size for the most attractive presentation. No worries if you don’t have a crowd to feed—leftover soup makes a wonderful brown bag lunch.

In Fall, Poultry, Recipes, Spring, Summer, Winter On January 3, 2013 0 Comments

All props for this recipe go to my dear friend, Dyan who gave me the idea for this classic combo many moons ago when we were writing our first book. Tender chicken simmers with tomatoes, oregano and cumin. The finished dish is garnished with fresh herbs, feta and olives. The rice can be mixed into the sauced chicken or served on the side. YUM!
