Cinnamon-Walnut Stuffed Apples made in the slow cooker are the epitome of healthful comfort food. Packed with lightly sweetened walnuts plus a generous amount of cinnamon, we’ve given you the option to add raisins and and a little brandy or rum…or both.  

For sweetness, this recipe relies primarily on the natural sugars in the apples and a little apple juice. However, there is a small amount of brown sugar used as well (1/3 cup for 6 apples). If you’d rather swap the sugar for a brown sugar alternate, you could try Swerve brown sugar, or coconut sugar—it depends on your nutrition goals and preferences. Since the recipe makes its own “syrup,” honey or maple syrup are also an option, though be prepared for a stickier job when filling the apples.

Cinnamon-Walnut Stuffed Apples


  • 1/4 cup apple cider or apple juice
  • 1 1/2 teaspoon spiced rum or brandy (optional)
  • 6 Golden Delicious apples
  • 1/2 cup toasted, chopped walnuts
  • 1/3 cup golden raisins (optional)
  • 1/3 cup brown sugar
  • 2 tablespoons melted butter
  • 1 1/2 teaspoons cinnamon
  • pinch kosher salt
  • vanilla ice cream, vanilla yogurt or heavy cream (optional)


  • Add the cider and rum to the slow cooker crock; set aside.
  • Core the apples from the top, leaving the bottom intact so the stuffing doesn't fall out. For the best presentation, run a paring knife around the top of the cored apple to widen the cavity a bit, allowing more of the stuffing to show when the apples are filled.
  • Stir together the remaining ingredients (except the ice cream) in a medium bowl until well mixed. Spoon the filling into the cored apples. Carefully transfer the apples to the crock.
  • Cover and cook 3 hours on LOW (or 1 1/2 hours on HIGH).
  • Serve each apple with a bit of the cooking juice spooned around it. Garnish with ice cream, yogurt or heavy cream, if desired.
